Chorizo goat cheese rolls

Each week we plan our meals around specific ingredients that are on sale, generally basing our meal plan around one or two main meats. Last week we found an ingredient we don't normally use: chorizo! If you haven't had chorizo before, it's a slightly spicier version of pork sausage. For our first chorizo meal we're making a rollup (somewhere in between won tons and egg rolls, but baked) also using goat cheese.

You can find ground chorizo in a package like ground beef at your grocer's meat section, but we found it on sale in links, so we just cut open two and a half links for this meal and discarded the casing. Our other ingredients are soft goat cheese, wont ton wraps, and diced green onions.


First we're breaking up the chorizo on a hot skillet.


The chorizo is cooked through first before we add the remaining ingredients.


Then we add in the goat cheese and green onions and mix through to create a filling. The goat cheese actually gave this an amazing flavor that calmed down the chorizo a bit, but we're looking forward to trying this a few other ways as well. We're considering trying this again with soft tofu or ricotta instead of goat cheese.


A spoonful of the filling is placed in a wonton roll, which is then rolled up.


Repeat, and repeat, and repeat (it seems like the filling and rolling will never end for awhile....)


We decided to bake these instead of frying in oil or cooking on the skillet, and they came out great with a crunchy exterior.


We lined up a few on a plate and served with a side salad (complete with all the veggies and cheese toppings!)


These chorizo and goat cheese rolls taste fantastic on their own, or you can dip them into any sauce that strikes your fancy - soy sauce, sesame dressing, ranch, etc.
